How It Works

Knowing when to harvest is just as important as knowing when to plant. Most vegetables have a peak harvest window -- pick too early and you miss flavor; too late and texture suffers or the plant stops producing. Days to harvest on seed packets are estimates from transplant date (not seed date), and actual timing varies with weather, soil, and zone. Cold zones add 5-10 days per zone below 7. The best way to learn timing is to keep a garden journal and note when each crop is ready. Succession planting (sowing the same crop every 2-4 weeks) extends your harvest season from a single burst to a steady supply over months.
